The pressure regulator is adjustable to make 5, 10, or 15lb weight. For low-acid canning, use 10 pounds of pressure for altitudes up to 1,000 feet and 15 pounds for higher altitudes. For high-acid canning, use 5 pounds of pressure below 1,000 feet and 10 pounds above.
